Healthier-than-Egg Rolls

This recipe from Taste of Home provides a quick and healthier alternative to the traditional take-out favourite. We love that it's loaded with cabbage to keep it balanced, and you'll love the convenience of using coleslaw mix to cut down on prep time (read: very little chopping!). 

What you'll need:
  • 1 lb lean ground chicken

  • 1 1/2 cups sliced fresh mushrooms

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 1 tsp minced fresh gingerroot

  • 2 Tbsp reduced-sodium soy sauce

  • 1 package (14 oz) coleslaw mix

  • 1 Tbsp sesame oil

  • 3 cups hot cooked brown rice

  • 1/2 cup sweet-and-sour sauce
