Easy 20-Minute Dumpling Soup

This 20-minute one-pot soup recipe from The Modern Proper is perfect for a quick and easy weeknight dinner. It is truly one of the simplest recipes we've ever tried!

To make, you'll saute garlic and ginger in sesame oil. You'll then add the remaining ingredients except for the potstickers and spinach, and bring the mixture to a boil. Once the mixture is boiling, you'll add the wontons and boil for two minutes, then stir in fresh spinach until wilted. That's it! 

 

The original recipe is quite high in sodium. We suggest using low-sodium broth and soy sauce and swapping at least 2 cups of broth for water. 

What you'll Need:

  • 1 tbsp sesame oil

  • 2 tbsp fresh ginger

  • 4 cloves garlic

  • 1/2 bunch green onions

  • 3 tbsp low sodium soy sauce  

  • 4 cups low sodium chicken stock 

  • 2 cups water 

  • 2 large carrots

  • 1.5 lb mini potstickers

  • 2 cups fresh spinach
