Chicken Fattoush

I love this Chicken Fattoush salad from BBC Good Food for dinners or meal prep lunches. Salads get an unfair reputation for being boring, but they can be a great way to make sure you’re getting enough veggies. Just make sure they’re balanced, like this recipe.

This recipe caught my eye because it uses simple ingredients that I already had at home. I love the use of chicken as a lean protein source, and the fresh-tasting dressing made from lemon juice and EVOO. Cook your chicken ahead of time or use leftovers for an even faster weeknight meal, or use this recipe to meal prep your lunches for the week.

What you’ll Need:

  • juice 2 lemons

  • 2 tbsp olive oil

  • 1 Cos lettuce (we used romaine)

  • 2 tomatoes

  • small pack flat-leaf parsley

  • 1/2 cucumber

  • 16oz cooked chicken

  • 2 spring onions

  • 2 pitas

  • 1-2 tsp ground sumac

Makes 4 servings

Ready in 15 minutes
