Bruschetta with White Bean Spread

 

This Bruschetta with White Bean Spread is the perfect appetizer or lunch recipe. It has all the familiar flavours of bruschetta but with some added protein from the white beans to keep things balanced. 

 

How to make Bruschetta with White Bean Spread

Ingredients you’ll need for the bruschetta: 

Cherry tomatoes: these are a great option when you’re making this recipe outside of tomato season. If tomatoes are in season, your local variety is always the most flavourful! 

Basil

Red onion

Baguette (or whole grain crackers)

Garlic 

Parmesan cheese or balsamic glaze for serving 

 

Ingredients you’ll need for the white bean spread: 

2 cups navy beans

Olive oil 

Salt 

Garlic 

Lemon juice

Rosemary

How to make Bruschetta with White Bean Spread 

 

Dice the tomatoes and place them in a medium bowl. Add salt to the tomatoes and mix. Let sit for 10 mins. This will help pull out the excess water from the tomatoes.

 

After 10 minutes (or longer if you have the time), strain the excess water. Add the remaining bruschetta ingredients to the bowl mix until evenly combined. 

 

While you’re waiting for the tomatoes to strain, add the white bean spread ingredients to a food processor. Blend until smooth. Season with salt and pepper, to taste. 

 

If you’re using a baguette or fresh loaf of bread, cut the loaf into slices and brush one side with olive oil. Broil in your oven until lightly toasted.

Bruschetta: 

1 container of cherry tomatoes, quartered

1/4 cup basil, chopped

¼ cup finely chopped red onion 

1 baguette 

1 tbsp extra virgin olive oil 

¼ tsp salt 

1 clove garlic, minced

Parmesan cheese or balsamic glaze for serving

White bean spread: 

2 cups navy beans 

3 tbsp extra virgin olive oil 

1/4 tsp salt 

2 cloves garlic

2 tbsp lemon juice 

1/2 tsp rosemary 


Instructions
