30-Minute Skillet Chicken Caprese

All you need for this recipe from Life Made Simple is a handful of ingredients and you’ve got yourself a delicious 30-minute chicken Caprese.

 

 

To make, you'll season chicken breast before searing both sides in an oven-safe skillet. You'll then place the pan in the oven to bake, topped with cheese and tomatoes in the last few minutes of cooking. 

 

Serve the chicken with some roasted vegetables and potatoes or a mixture of spiralized veggies and spaghetti with a marinara sauce for a balanced meal.

What you'll Need: 
  • 1 1/2 tsp herbes de provence

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • 1/8 tsp cayenne pepper

  • 1/2 tsp salt1/4 tsp black pepper

  • 3 boneless skinless chicken breast

  • 2 Tbsp olive oil

  • 3 slices mozzarella cheese

  • 1 cup cherry tomatoes

  • 1/4 cup basil leaves

  • 2 Tbsp balsamic vinegar
